Sharing our creative cooking stories

As we settle in to these uncertain and changing times, there is much to be grateful for, and much for us to find humor in.  Early on – Bronwyn realized she just might run out of toilet paper, underestimating our current “state of affairs.”  There was plenty of food in her pantry and freezer as she had been supporting her favorite local farms and markets with curb-side pick- up, but store shelves were completely bare of this much needed item.   Really?!?!   

Her text to me……Trade you 3 rolls of TP for 3 pounds of ground beef!  SOLD!  What a deal… she had recently done a pick-up at one of her favorite local farms, Trillium Hill Farm in Hinesburg. A young man opened her trunk and placed the order inside.  Once home, she discovered she was given triple her beef order.  No one wants any returns these days.

We made our socially-distanced, open-air beef for TP exchange; I, clad in rubber gloves, tossed the toilet paper into her car saying I had sanitized it, and she carefully dropped the bag of beef in my driveway, waved, and drove away.   

Many of you have your stories of humor, humility, patience, and creativity, that continue to sustain you and your loved ones through our new way of living.  We have all been given the gift of more time these past few weeks, a precious quantity, one that is often in short supply.

A theme these days with friends near and far is creativity and fun in our kitchens as we count the hours ‘til our next meal.  My daughter, Molly, stuck in lockdown with her parents, creates a weekly meal plan after carefully assessing what needs to be used up and what can keep.  Shepherds Pie, Lemon Asparagus Risotto, Gluten Free pizza, and Mexican chicken tacos ……YUM!  

But a family favorite – a good old fashioned Roasted Chicken.

During the first week of our new ‘stay- at- homeness’ it seemed almost everyone I connected with was roasting a chicken.  Interesting…. but why not? Placed on a roasting pan with its legs sticking upward and wings tucked under, as the bird roasts, aromas of herbs and spices permeate the air, and the sizzling juices offer comfort that it soon will be done. Once out of the oven it’s quite beautiful to look at with a golden-brown skin, and a shriveled lemon poking from the cavity.   Who can’t cook a chicken?  Just remember to remove the bag of chicken parts from the cavity before cooking!  And the countless creative meals you can create from a chicken roaster including homemade chicken soup, make it a perfect “quarantine” choice.
